Preparation
- Line an 8x8 inch pan with parchment paper, leaving some overhang.
- In a pot over low heat, melt the butter with honey or maple syrup until smooth, then remove from heat.
- Stir in the peanut butter until creamy. Add vanilla and a pinch of salt.
- Add the rolled oats and mix until the oats are fully coated in the mixture.
- Scoop the mixture into the pan and press it down firmly using the back of a spoon and then with clean hands.
- Microwave the chocolate chips in short bursts, stirring in between until melted. Optionally, add a bit of peanut butter to make it softer.
- Spread the melted chocolate over the oat base and smooth it out.
- Chill for at least 1 to 2 hours before lifting out and slicing.
Notes
For clean slices, chill the bars long enough. Using parchment paper helps with lifting and slicing.
