Ingredients
  

For the crust
  • 1 1/2 cups crushed graham crackers Can substitute with digestive biscuits or a pistachio crust.
  • 1/2 cup melted butter Ensure it's mixed well with the crust crumbs.
  • 1 pinch salt Optional, to enhance flavor.
  • 2 tablespoons sugar Adjust according to preference.
For the filling
  • 16 oz full-fat cream cheese Must be at room temperature for easy mixing.
  • 2 cups heavy cream Chilled and whipped until soft peaks form.
  • 3/4 cup powdered sugar Adjust for sweetness.
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice For added flavor.
For the cherry topping
  • 1 cup fresh or canned cherries If using fresh, pit and slice them. For canned, add lemon juice to taste.
For garnish
  • 1/2 cup toasted pistachios Chopped for topping.

Method
 

Prepare the crust
  1. In a bowl, mix crushed graham crackers with melted butter, sugar, and salt until combined.
  2. Press the mixture firmly into the bottom of a springform pan.
  3. Chill the crust in the refrigerator while you prepare the filling.
Make the filling
  1. In a large mixing bowl, beat the cream cheese until smooth.
  2. Add in the powdered sugar, vanilla, and lemon juice, mixing until well combined.
  3. In a separate bowl, whip the heavy cream until soft peaks form.
  4. Fold the whipped cream gently into the cream cheese mixture until no streaks remain.
  5. Spread the filling evenly over the chilled crust.
Chill and serve
  1. Cover and chill the cheesecake in the refrigerator for at least 6 hours, preferably overnight.
  2. Before serving, top with cherries and chopped toasted pistachios.
  3. Slice and enjoy!

Notes

For best results, use full-fat ingredients and allow the cheesecake to chill overnight for firm slices. It can be frozen for longer storage.
