Ingredients
  

For the crust
  • 1 cup pistachios, shelled Lightly toasted for enhanced flavor
  • 1 cup chocolate sandwich cookies, crushed Can substitute with graham crackers or vanilla wafers
  • 1/2 cup butter, melted Essential for flavor
For the cheesecake filling
  • 16 oz cream cheese, room temperature Avoid using cold to prevent lumps
  • 1/2 cup Greek yogurt Adds a nice tang
  • 1/2 cup powdered sugar Adjust sweetness to taste
  • 1 tsp vanilla extract For flavor
For the topping
  • 1 can cherry pie filling Can use homemade or store-bought

Method
 

Prepare the crust
  1. In a food processor, pulse the pistachios, crushed cookies, and melted butter until a coarse mixture forms.
  2. Press the mixture into the bottom of a springform pan to form a solid crust.
Make the cheesecake filling
  1. In a mixing bowl, beat the cream cheese until smooth and glossy.
  2. Add in the Greek yogurt, powdered sugar, and vanilla extract, and mix until well combined and smooth.
Assemble the cheesecake
  1. Spread the cheesecake mixture over the prepared crust.
  2. Top with cherry pie filling evenly.
Chill and serve
  1. Cover and refrigerate the cheesecake for at least 6 hours, preferably overnight, to set.
  2. Serve chilled with extra cherries if desired.

Notes

Use full-fat ingredients for best flavor and texture. Feel free to experiment with different fruit toppings such as blueberries or raspberries.
