Ingredients
  

For the Apple Layer
  • 3 to 4 medium medium crisp apples, peeled and diced (Honeycrisp or Granny Smith) Use a mix for balance.
  • 1 tablespoon butter For melting in the skillet.
  • 2 tablespoons brown sugar To make the apples jammy.
  • 1 teaspoon cinnamon Add for warmth.
  • a pinch of salt Wakes up the caramel and apples.
For the Cheesecake Layer
  • 8 ounces cream cheese, room temperature Blend smooth.
  • 1/2 cup powdered sugar For sweetness.
  • 1 teaspoon vanilla extract For flavor.
  • 1 cup whipped cream Use homemade or store-bought.
For the Crunch Layer
  • 1 cup crushed graham crackers or vanilla cookies Can also use pound cake cubes.
  • 2 tablespoons melted butter For graham crackers to hold up.
For Assembly
  • 1/2 cup caramel sauce For drizzling.

Method
 

Cooking the Apples
  1. Melt butter in a skillet over medium heat.
  2. Add diced apples, brown sugar, cinnamon, and a pinch of salt.
  3. Cook for 6 to 8 minutes until the apples are juicy and soft, but not mushy.
  4. Cool the mixture completely.
Making the Cheesecake Layer
  1. In a mixing bowl, beat cream cheese with powdered sugar and vanilla until smooth.
  2. Gently fold in the whipped cream until just combined.
Preparing the Crunch
  1. Crush cookies or cube cake.
  2. If using graham crackers, mix in melted butter.
Assembly
  1. In serving jars or a big bowl, layer in this order: crunch, cheesecake cream, apples, and a drizzle of caramel.
  2. Repeat layers until jars are filled.
Chilling
  1. Chill in the fridge for 30 to 60 minutes to allow flavors to meld.

Notes

For extra crunch, layer right before serving. You can make these a day ahead but add final layers of cookie crumble and caramel before serving.
