Ingredients
  

Crust
  • 1 cup Graham cracker crumbs Can substitute with a store-bought crust or crushed digestive biscuits.
  • 2 tbsp Sugar Added to crust mixture.
  • 5 tbsp Butter, melted Helps bind the crust together.
Filling
  • 8 oz Cream cheese, softened Make sure it's softened to avoid lumps.
  • 1 cup Powdered sugar Keeps the filling smooth.
  • 1 tsp Vanilla extract Adds flavor to the filling.
  • 1 cup Whipped topping or whipped cream Both can be used, but whipped topping holds shape better.
Topping
  • 1 can Blueberry pie filling Easiest for a quick topping.

Method
 

Preparation
  1. In a bowl, stir together the graham cracker crumbs, sugar, and melted butter.
  2. Press the mixture firmly into a pie dish and chill while preparing the filling.
Filling
  1. Beat the softened cream cheese until smooth.
  2. Mix in powdered sugar and vanilla until combined.
  3. Fold in the whipped topping or whipped cream until fluffy.
Assembly
  1. Spoon the creamy filling into the chilled crust and smooth the top.
  2. Spread the blueberry pie filling over the creamy layer.
  3. Chill the pie for at least 4 hours, preferably overnight.
Serving
  1. Slice and serve, wiping the knife between cuts for clean slices.

Notes

This pie needs sufficient chill time to set properly. If using frozen blueberries, cook with sugar, lemon juice, and cornstarch to avoid excess water.
