- In a bowl, mix chia seeds with milk or milk alternative thoroughly.
- Stir again after 10 minutes to prevent clumping.
- Add blueberries, sweetener, and vanilla to the mixture, stirring gently.
- For the crust, blend together crushed graham crackers or dates and nuts until sticky.
- Layer the crust at the bottom of your serving dish or jars.
- Pour the chia seed mixture over the crust and smooth the top.
- Refrigerate the pie for at least 2-3 hours, preferably overnight.
Notes
This pie can last in the fridge for up to 3 days. The crust may become softer after day two. Top the pie with toasted coconut, lemon zest, or fresh blueberries for a fancy touch. Avoid wearing white while making this as blueberries can stain.
