For the filling

  • 50 grams Granulated sugar To sweeten the topping.
  • 1 tablespoon Cornstarch To thicken the topping.
  • 60 ml Water To dissolve cornstarch and sugar.

Method

Preparation
  1. In a bowl, mix crushed biscuits with melted butter until fully combined.
  2. Press the mixture firmly into the bottom of a springform pan to form the crust. Chill in the refrigerator for 30 minutes.
  3. In a separate bowl, beat the cream cheese and powdered sugar together until smooth.
  4. Gently fold in the whipped cream and vanilla extract until well combined.
  5. Spread the cream cheese filling over the chilled crust, smoothing the top.
  6. Cover and chill in the fridge for at least 4 hours, preferably overnight.
Blueberry Topping
  1. In a small saucepan over medium heat, combine blueberries, sugar, cornstarch, and water.
  2. Cook until the mixture is bubbling and thickened, about 5-7 minutes. Remove from heat and let cool.
  3. Once the cheesecake has set, pour the cooled blueberry topping over the top.
Serving
  1. Let the cheesecake sit at room temperature for a few minutes before slicing for cleaner cuts.
  2. Serve with extra blueberries on the side and enjoy!

Notes

For a zesty twist, feel free to add lemon zest to the filling. Ensure the cheesecake stays cold until serving to maintain its texture.
