Mushroom and Swiss Burger Foil Packets

An easy and nostalgic dinner fix that combines juicy burgers, mushrooms, and Swiss cheese in convenient foil packets for minimal cleanup and maximum flavor.

Ingredients
  

For the Burger Packets
  • 1 lb ground beef (80/20 recommended) You can use other fat ratios as desired.
  • 1 tsp garlic powder Adjust according to taste.
  • 0.5 tsp salt To taste.
  • 0.5 tsp black pepper To taste.
  • 8 oz cremini or button mushrooms Sliced.
  • 1 cup thinly sliced onions You can use yellow or white onions.
  • 1 cup bell peppers Any color, sliced.
  • 4 slices swiss cheese Add on top of the patties before closing foil.
  • 4 sheets nonstick foil For wrapping.
Optional Vegetables
  • 1 cup sliced potatoes or sweet potatoes Soak in cold water if prepping ahead.
  • 0.5 cup zucchini coins Can substitute for other vegetables.
  • 0.5 cup baby carrots Sliced thin.
  • 1 cup green beans Trimmed.

Method
 

Preparation
  1. In a mixing bowl, combine ground beef, garlic powder, salt, and pepper.
  2. Lay out a sheet of nonstick foil and place an appropriate portion of the beef mixture in the center.
  3. Shape the beef into a patty without flattening it too much for juiciness.
  4. Top the patty with a slice of Swiss cheese then layer with mushrooms, onions, and bell peppers.
  5. Drizzle optional vegetables with olive oil and season before adding on top of the meat.
  6. Fold the foil tightly around the ingredients to seal.
Cooking
  1. Place the foil packet on a medium-high grill, or in a preheated oven at 400°F (200°C).
  2. Cook for approximately 25 minutes, checking for doneness.
  3. Carefully open the packet (steam will escape) and serve hot.

Notes

You can prep these packets up to a day in advance. Do not add cheese until right before cooking. Foil packets are versatile; feel free to customize vegetables and seasonings to suit your taste.
