  • 1 cup sweetened shredded coconut
  • 1 cup graham cracker crumbs crushed
  • 1/2 cup sweetened condensed milk not evaporated milk
  • 1/3 cup peanut butter or sunbutter for nut-free option
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • cup chocolate chips for optional topping or rolling

Method
 

Preparation
  1. In a large bowl, combine the shredded coconut and graham cracker crumbs, mixing well.
  2. Add the peanut butter, vanilla extract, and a pinch of salt to the bowl.
  3. Pour the sweetened condensed milk over the ingredients and mix until combined.
  4. Scoop out small spoonfuls and roll them into balls, placing on a parchment-lined tray.
  5. Chill in the fridge for 20-30 minutes if desired, but they can be enjoyed immediately.

Notes

You can also add variations like almond butter, mini M&Ms, or cocoa powder.
