Preparation
- Preheat your oven to 350°F (175°C). Grease your loaf pan and line it with parchment if desired.
- In a medium bowl, whisk together the dry ingredients: flour, baking soda, baking powder, salt, and spices.
- In a larger bowl, whisk together the wet ingredients: pumpkin puree, eggs, oil, milk, both sugars, and vanilla until smooth.
- Pour the dry ingredients into the wet ingredients and gently stir until just combined. Do not overmix.
- Fold in nuts or chocolate chips if using.
Baking
- Pour the batter into the prepared loaf pan.
- Bake for 50 to 60 minutes, checking at the 50-minute mark. A toothpick inserted should come out with a few moist crumbs.
- Allow the loaf to cool in the pan for 10 to 15 minutes, then transfer to a rack to cool completely before slicing.
Notes
Avoid using pumpkin pie filling, as it contains additional sugar and spices. Ensure not to overmix the batter to maintain a tender texture.
