Ingredients
  

Brownie Ingredients
  • 1/2 cup Butter, melted Butter gives better flavor, you can use neutral oil.
  • 3/4 cup Brown sugar Keeps brownies soft.
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 1/2 cup Unsweetened cocoa powder
  • 1 cup All-purpose flour
  • 1/2 teaspoon Salt
  • 1 teaspoon Baking powder Just a touch to keep them light.
  • 1.5 cups Peeled apples, diced small Granny Smith or Honeycrisp recommended.
  • 3/4 cup Chopped cherries Dried tart cherries are easiest; use fresh or frozen if needed.
  • 1/2 cup Chocolate chips Optional for extra fudginess.
Maple Glaze Ingredients
  • 1 cup Powdered sugar
  • 3 tablespoons Pure maple syrup
  • 2 tablespoons Milk or cream As needed to thin the glaze.
  • pinch Salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line an 8x8 pan with parchment paper or grease it well.
  2. In a large bowl, whisk melted butter with brown sugar and white sugar until glossy. Mix in eggs and vanilla extract.
  3. Sprinkle in cocoa powder, flour, salt, and baking powder. Stir gently until no dry streaks remain.
  4. Fold in diced apples and chopped cherries until evenly distributed. Optionally, add chocolate chips.
Baking
  1. Spread the batter evenly in the prepared pan. Bake for 28 to 35 minutes, checking at 28 minutes. A toothpick should come out with moist crumbs.
Glazing
  1. Allow the brownies to cool in the pan for at least 30 minutes.
  2. For the glaze, mix powdered sugar, maple syrup, a pinch of salt, and enough milk to reach desired consistency.
  3. Drizzle the glaze over the cooled brownies and let it set for 10 to 15 minutes before slicing.

Notes

Brownies are best after sitting for a bit; flavors improve overnight. Store in an airtight container, keeping at room temperature for 2 days and in the fridge for up to 5.
