Ingredients
  

Crust and Topping
  • 1 pack Mint Oreo cookies, about 1 family size package Crushed for crust and used as topping.
  • 6 tablespoons Butter, melted For a sturdy crust.
Cream Layer
  • 8 ounces Cream cheese, softened Softened to prevent lumps.
  • 1 cup Powdered sugar Adjust to taste.
  • 12 to 16 ounces Whipped topping (like Cool Whip) Divided between layers.
Pudding Layer
  • 2 small boxes Instant chocolate pudding mix Or 1 large box.
  • 3 cups Cold milk Amount needed for the pudding, check your box.
  • 1 to 2 drops Mint extract, optional Use sparingly for flavor.
  • green Food coloring, optional For the vibe.
  • to taste Chocolate chips or chocolate shavings, optional for the top

Method
 

Preparation
  1. Crush the Mint Oreo cookies and mix with melted butter to form a crust.
  2. Press the crust firmly into a 9x13 inch dish and chill for 10 minutes.
  3. In a bowl, mix softened cream cheese and powdered sugar until smooth.
  4. Fold in whipped topping, reserve some for topping.
  5. Prepare the chocolate pudding mix with cold milk according to the package instructions and allow to thicken for about 2 minutes.
  6. Spread the cream cheese mixture over the crust.
  7. Layer the chocolate pudding over the cream cheese layer.
  8. Top with reserved whipped topping and crushed Mint Oreos.
  9. Cover and refrigerate for at least 4 hours, preferably overnight.

Notes

For better results, pack the crust down tightly and avoid too much mint extract. Clean knife between cuts for neat slices. Store leftovers in the fridge or freeze for up to a month.
