Ingredients
  

For the Cookie Dough
  • 1 cup Unsalted butter, softened To cream easily
  • 1 cup Brown sugar For chewy, caramelly depth
  • 1/2 cup Granulated sugar To keep edges lightly crisp
  • 2 large Eggs For structure and richness
  • 1 teaspoon Vanilla extract Enhances chocolate flavor
  • 1 teaspoon Mint extract Start small; add more if needed
  • 1 box (3.4 oz) Instant vanilla pudding mix Boosts softness; use instant, not cook and serve
  • 2 1/4 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 2 cups Chocolate chips Semi-sweet or dark chocolate
  • optional Green food coloring For festive mint look

Method
 

Preparation
  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the eggs, one at a time, then stir in the vanilla and mint extracts.
  4. In another bowl, combine the pudding mix, flour, baking soda, and salt.
  5. Gradually mix the dry ingredients into the wet mixture until combined.
  6. Fold in chocolate chips and optional green food coloring.
Baking
  1. Drop tablespoon-sized balls of dough onto ungreased baking sheets.
  2. Press a few extra chocolate chips on top of each dough ball.
  3. Bake for 10-12 minutes, or until edges are light golden brown.
  4. Let cookies cool on baking sheets for a few minutes before transferring to wire racks.

Notes

Do not overbake; the centers should look slightly underdone. Chill the dough if your kitchen is warm to prevent excessive spreading. Using a cookie scoop helps to keep cookies uniform in size.
