- Mix together the sugar and cinnamon in a small bowl to create the sugar coating.
- Melt the butter in a large skillet over low heat. If using, stir in the vanilla after the butter has melted.
- Pour the Cheerios into the pan and gently stir to coat them in the melted butter.
- Turn off the heat and gradually sprinkle the cinnamon sugar mixture over the Cheerios while stirring to ensure even coating.
- Spread the coated Cheerios onto a parchment-lined baking sheet and let cool for 5 to 10 minutes.
- For extra crunch, optionally toast in the oven at 300°F for 8 to 10 minutes, stirring halfway through.
Notes
Let the cereal cool completely before storing in an airtight container to maintain crunch. Best consumed within 3 to 5 days at room temperature. Can be made dairy-free by using a suitable butter alternative.
