Mini Caprese Skewers with Pesto

Ingredients
  

For the skewers
  • 2 cups Cherry tomatoes or grape tomatoes Choose firm, sweet varieties.
  • 1 cup Fresh mozzarella balls (bocconcini or ciliegine) Drain and pat dry before using.
  • 1 cup Fresh basil leaves Optional, but adds great flavor.
  • 1 cup Pesto Store-bought is fine; homemade is great.
  • 8 pieces Skewers or toothpicks Use short ones for appetizers, longer for platters.
Optional Garnishes
  • to taste Balsamic glaze For drizzling.
  • to taste Black pepper Freshly ground for serving.
  • to taste Flaky salt For finishing touch.

Method
 

Preparation
  1. Rinse and dry the tomatoes to keep pesto from sliding off.
  2. Drain the mozzarella and pat it dry with paper towels.
  3. Thread one tomato, one mozzarella ball, and a basil leaf (if using) onto each skewer. Repeat until your platter looks abundant.
  4. Spoon a tiny bit of pesto on each skewer, or place pesto in a small bowl for dipping.
  5. If desired, finish with a drizzle of balsamic glaze and a pinch of flaky salt.
Make Ahead Tips
  1. Assemble skewers with just tomato, mozzarella, and basil up to 24 hours ahead.
  2. Store in a single layer in a container lined with a paper towel and cover.
  3. Refrigerate, and let sit for 10 to 15 minutes before serving. Add pesto right before serving.

Notes

For a variation, try different pesto styles like sun-dried tomato or arugula pesto. Adding prosciutto, chili flakes, or serving with toasted baguette slices are also great options.
