Ingredients
  

Crust
  • 1 cup Graham cracker crumbs Can substitute with vanilla wafers or crushed vanilla sandwich cookies.
  • 2 tablespoons Sugar Reduce if using sweet cookies for the crust.
  • 4 tablespoons Melted butter Acts as a glue for the crust.
Cheesecake Filling
  • 16 ounces Cream cheese, room temperature Ensure it is at room temperature to avoid lumps.
  • 1 cup Sugar Sweeten to taste.
  • 3 large Eggs Add one at a time and mix gently.
  • 2 teaspoons Vanilla extract For flavor enhancement.
Bunny Decorations
  • 12 mini Marshmallows For bunny ears.
  • 1 cup Pink sanding sugar To coat the marshmallow ears.
  • 12 small Pink candies or mini jelly beans For the noses.
  • 1/4 cup Chocolate sprinkles For eyes and whiskers.
  • 1 cup Whipped cream To secure decorations.

Method
 

Preparation
  1. Preheat your oven to 325°F (163°C). Line a standard 12-cup muffin tin with paper liners.
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of each muffin liner to form the crust.
  3. In a separate bowl, beat the cream cheese until smooth. Add sugar and mix well.
  4. Add eggs one at a time, mixing gently after each addition. Finally, stir in vanilla extract.
Baking
  1. Spoon the cheesecake filling into each crust, filling them about 2/3 full.
  2. Bake for about 18 minutes or until the edges are set but the centers are still slightly jiggly.
  3. Turn off the oven, crack the door, and let the cheesecakes cool gradually for about 10 minutes before transferring them to the counter.
Cooling and Decorating
  1. Chill the cheesecakes in the refrigerator for at least 2 hours, preferably overnight for best flavor.
  2. When ready to serve, decorate each cheesecake by adding marshmallow bunny ears, a pink candy nose, and chocolate sprinkles for eyes.
  3. Add a swirl of whipped cream to secure the decorations and serve immediately.

Notes

Mini cheesecakes can be made a day ahead and stored in the refrigerator. Keep decorated cheesecakes chilled until serving. For variations, try adding strawberry jam, lemon zest, or cocoa powder to the cheesecake batter.
