- Boil the pasta until barely tender, then drain. Do not overcook, as it will bake more in the oven.
- Melt butter in a saucepan, stir in flour, and whisk in milk. Keep whisking until the mixture thickens.
- Once thickened, lower the heat and add sharp cheddar, mozzarella, and cream cheese. Stir until melted.
Mixing and Baking
- Stir the cooked pasta into the cheese sauce until well coated.
- Pour the mixture into a buttered baking dish. Top with extra cheese and breadcrumbs if desired.
- Bake in a preheated oven until bubbly and golden, about 20-25 minutes.
Notes
This mac and cheese reheats well; to reheat, add a splash of milk and cover when warming in the oven or microwave.
