  • 1 lb boneless chicken thighs or breasts Thighs are juicier, while breasts are leaner.
  • 4 cups low sodium chicken broth Best to control salt levels.
  • 2 eggs Gives the soup its creamy texture.
  • 2 large lemons, juiced Fresh juice is crucial for flavor.
  • 1 cup rice or orzo Rice is classic, orzo adds coziness.
  • 1 medium onion, chopped Provides sweetness to the base.
  • 2 cloves garlic, minced Essential for flavor.
  • 1 tbsp olive oil For sautéing.
  • to taste salt Start light, adjust at the end.
  • to taste pepper Add to taste.
  • to taste fresh dill or parsley Optional, for garnish.

Method
 

Preparation
  1. In a soup pot, warm a little olive oil. Add chopped onion and cook until it looks soft and smells sweet. Toss in garlic for about 30 seconds.
  2. Add chicken broth and bring it to a gentle boil. Add your chicken and cook until it is done.
  3. Pull the chicken out, shred it, and set it aside.
  4. Add rice or orzo to the broth and cook until tender, stirring occasionally.
  5. Whisk eggs in a bowl until smooth, then whisk in fresh lemon juice.
  6. Slowly ladle hot broth into the egg lemon mixture while whisking continuously to temper the eggs.
  7. Turn the heat down low. Pour the warmed egg lemon mixture back into the pot, stirring gently. Do not let it boil.
  8. Add shredded chicken back in. Taste and adjust salt, pepper, and add fresh herbs if desired.

Notes

Leftovers can be stored in the fridge for 3 to 4 days. For freezing, consider freezing the soup base before adding the egg lemon mixture for best texture. Reheat gently and stir to maintain consistency.
