- In a soup pot, warm a little olive oil. Add chopped onion and cook until it looks soft and smells sweet. Toss in garlic for about 30 seconds.
- Add chicken broth and bring it to a gentle boil. Add your chicken and cook until it is done.
- Pull the chicken out, shred it, and set it aside.
- Add rice or orzo to the broth and cook until tender, stirring occasionally.
- Whisk eggs in a bowl until smooth, then whisk in fresh lemon juice.
- Slowly ladle hot broth into the egg lemon mixture while whisking continuously to temper the eggs.
- Turn the heat down low. Pour the warmed egg lemon mixture back into the pot, stirring gently. Do not let it boil.
- Add shredded chicken back in. Taste and adjust salt, pepper, and add fresh herbs if desired.
Notes
Leftovers can be stored in the fridge for 3 to 4 days. For freezing, consider freezing the soup base before adding the egg lemon mixture for best texture. Reheat gently and stir to maintain consistency.
