Ingredients
  

For the filling
  • 2 cups Sweetened shredded coconut For that classic chewy sweetness
  • 1 cup Chopped pecans Walnuts work as a substitute
  • 2 cups Powdered sugar To bind and sweeten the filling
  • 1 can Sweetened condensed milk For richness and creamy texture
  • 1 teaspoon Vanilla extract A tiny splash of almond extract can be added
For dipping
  • 12 ounces Chocolate for dipping Melting wafers or chocolate chips with a little shortening
  • 1 tablespoon Coconut oil or shortening To smooth the chocolate dip if using chocolate chips

Method
 

Preparation
  1. Mix the filling ingredients until everything is evenly combined and sticky.
  2. Chill the mixture for about 30 minutes until it firms up enough to roll.
  3. Roll the chilled mixture into bite-sized balls and place on a lined tray.
  4. Chill again for about 15 minutes to ensure they stay firm during dipping.
  5. Melt the chocolate and dip each ball, allowing excess chocolate to drip off before placing them back on the tray to harden.

Notes

Store in an airtight container, separating layers with wax paper. Room temperature is fine for a few days. Refrigerate for up to 2 weeks or freeze for up to 2 months.
