Marry Me Shrimp with Creamy Orzo

Ingredients
  

Main ingredients
  • 1 lb medium or large shrimp, peeled and deveined Tail on looks pretty, tail off is easier to eat.
  • 1 cup orzo Cooks right in the sauce.
  • 4 cloves garlic, minced DO not be shy with garlic.
  • 3 cups chicken broth Adds depth to the dish.
  • 1 cup heavy cream Makes the dish rich and silky.
  • 1/2 cup freshly grated Parmesan cheese Melts best and tastes less salty than powdered.
  • 1/4 cup sun-dried tomatoes, chopped Adds sweet tangy flavor.
  • 1 tsp Italian seasoning or mix of oregano and basil Keeps flavors cozy.
  • 2 cups fresh spinach (optional) For color and nutritional boost.
  • 1 tbsp lemon juice Wakes up the flavors.
  • 2 tbsp olive oil or butter For cooking shrimp and garlic.
  • to taste salt and pepper For seasoning.
  • to taste paprika and chili flakes For seasoning shrimp.

Method
 

Preparation
  1. Season the shrimp with salt, pepper, paprika, and chili flakes.
  2. Sear the shrimp in olive oil or butter for 1-2 minutes on each side until pink, then set aside.
  3. In the same pan, add more oil if needed and cook the garlic for about 30 seconds.
  4. Stir in the chopped sun-dried tomatoes.
  5. Add the orzo and stir for about a minute until lightly toasted.
  6. Pour in the chicken broth, bring to a simmer, stirring occasionally.
  7. When orzo is almost tender, reduce heat and mix in cream and Parmesan.
  8. Add the shrimp back into the pan to warm through for another 1-2 minutes. Stir in spinach if using.
  9. Finish with lemon juice and adjust seasoning to taste.

Notes

Serve with a side salad or garlic bread for a complete meal. Make sure to not overcook the shrimp to keep it juicy.
