Preparation
- Season the shrimp with salt, pepper, paprika, and chili flakes.
- Sear the shrimp in olive oil or butter for 1-2 minutes on each side until pink, then set aside.
- In the same pan, add more oil if needed and cook the garlic for about 30 seconds.
- Stir in the chopped sun-dried tomatoes.
- Add the orzo and stir for about a minute until lightly toasted.
- Pour in the chicken broth, bring to a simmer, stirring occasionally.
- When orzo is almost tender, reduce heat and mix in cream and Parmesan.
- Add the shrimp back into the pan to warm through for another 1-2 minutes. Stir in spinach if using.
- Finish with lemon juice and adjust seasoning to taste.
Notes
Serve with a side salad or garlic bread for a complete meal. Make sure to not overcook the shrimp to keep it juicy.
