Ingredients
  

Main Ingredients
  • 4 pieces boneless, skinless chicken breasts or thighs
  • 12 ounces penne, fettuccine, or rigatoni pasta
  • 3 cloves garlic, minced fresh is best
  • 1 cup sun dried tomatoes, chopped jarred in oil are perfect
  • 1 cup heavy cream or half and half for a lighter option
  • 1 cup freshly grated Parmesan cheese melts nicer
  • 1 cup chicken broth helps loosen the sauce
  • to taste salt and pepper season in layers
  • 1 teaspoon Italian seasoning
  • optional spinach or basil for freshness

Method
 

Preparation
  1. Boil pasta in salted water. Save a splash of pasta water before draining.
  2. Season chicken with salt, pepper, and Italian seasoning. Sear it in a hot pan with a little oil until golden on both sides, then remove it.
Cooking
  1. In the same pan, add garlic and chopped sun dried tomatoes. Stir for about 30 seconds so the garlic does not burn.
  2. Pour in broth, then cream. Let it bubble gently until it starts to thicken.
  3. Stir in parmesan until smooth. If it gets too thick, loosen with pasta water.
  4. Add chicken back in, simmer a few minutes, then toss in pasta. Add spinach if using and let it wilt.
  5. Taste and adjust salt and pepper. Finish with basil if you have it.

Notes

Do not overcook the chicken, keep the heat medium once cream is added, and use pasta water to help sauce cling to pasta.
