Preparation
- Boil pasta in salted water. Save a splash of pasta water before draining.
- Season chicken with salt, pepper, and Italian seasoning. Sear it in a hot pan with a little oil until golden on both sides, then remove it.
Cooking
- In the same pan, add garlic and chopped sun dried tomatoes. Stir for about 30 seconds so the garlic does not burn.
- Pour in broth, then cream. Let it bubble gently until it starts to thicken.
- Stir in parmesan until smooth. If it gets too thick, loosen with pasta water.
- Add chicken back in, simmer a few minutes, then toss in pasta. Add spinach if using and let it wilt.
- Taste and adjust salt and pepper. Finish with basil if you have it.
Notes
Do not overcook the chicken, keep the heat medium once cream is added, and use pasta water to help sauce cling to pasta.
