  • 1 cup Unsalted butter, softened Make sure it's softened, not melted.
  • 1 cup Brown sugar, packed
  • 1/2 cup Pure maple syrup Avoid pancake syrup for best flavor.
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 1 cup Pecans, chopped Toast them for enhanced flavor.
  • 1 pinch Ground cinnamon Optional for extra flavor.

Method
 

Preparation
  1. Toast the pecans in a dry pan over medium heat for a few minutes until nutty smelling. Let them cool.
  2. In a large bowl, cream the softened butter and brown sugar until fluffy.
  3. Mix in the egg, maple syrup, and vanilla extract until glossy.
  4. Sprinkle in flour, baking soda, and salt. Mix just until combined.
  5. Fold in the cooled toasted pecans.
  6. Scoop dough onto a parchment-lined baking sheet.
Baking
  1. Bake at 350°F (175°C) for about 9 to 11 minutes, until edges are set but centers remain soft.
  2. Cool on the pan for 5 minutes before moving to a rack to finish cooling.

Notes

Use softened butter for a soft thick cookie. Chill the dough if sticky. Watch the bake time closely to avoid dry cookies.
