Maple Bacon and Egg Breakfast Casserole

Ingredients
  

Main Ingredients
  • 8 cups Bread cubes (sturdy bread like challah, brioche, or French bread) Use dry or slightly stale bread for best results.
  • 8 pieces Eggs Large eggs recommended.
  • 2 cups Milk or half and half
  • 0.5 cups Maple syrup (plus more for serving) Use real maple syrup for better flavor.
  • 8 to 12 slices Cooked bacon, chopped Cooked until crispy for best texture.
  • 1 to 2 teaspoons Vanilla extract
  • 1 teaspoon Cinnamon (optional) Adds warmth.
  • 1 tablespoon Butter for greasing baking dish To prevent sticking.
  • 1 pinch Salt Adjust salt according to taste due to bacon and cheese.

Method
 

Preparation
  1. Grease a 9x13 baking dish with butter.
  2. Layer half of the bread cubes in the baking dish.
  3. Sprinkle most of the chopped bacon over the bread.
  4. Add the remaining bread cubes on top.
  5. In a mixing bowl, whisk together the eggs, milk, maple syrup, vanilla, cinnamon, and a pinch of salt.
  6. Pour the egg mixture over the layered bread and bacon, pressing down gently with a spoon to ensure the bread absorbs the mixture.
  7. Cover the dish and refrigerate for at least 30 minutes, preferably overnight.
Baking
  1. Preheat the oven to 350°F (175°C).
  2. Remove the casserole from the refrigerator while the oven is heating.
  3. Bake uncovered for 40 to 50 minutes, until the center is set and the top is golden brown.
  4. If the top browns too quickly, cover loosely with foil for the last 10 minutes of baking.
  5. Let the casserole rest for 10 minutes before slicing for cleaner cuts.

Notes

Optionally, mix melted butter and brown sugar to drizzle over the top before baking for extra crunch. Can be frozen after baking or assembled and frozen before baking. For reheating, microwave individual slices and then crisp in an oven if desired.
