Ingredients
  

For the Tacos
  • 1 lb medium or large shrimp, peeled and deveined
  • 8 pieces corn or flour tortillas
  • 1 medium mango, diced
  • 4 cups cabbage or slaw mix shredded green and red cabbage for color
  • 1/4 cup cilantro, chopped optional
  • 1 lime juiced
  • to taste salt and pepper
For the Slaw Dressing
  • 1/2 cup Greek yogurt or sour cream use Greek yogurt for a lighter option
  • 1 tbsp lime juice
  • 1 pinch salt
  • 1 pinch sugar or honey optional for sweetness
  • to taste hot sauce optional for spice
Optional Toppings
  • to taste sour cream or Greek yogurt
  • to taste hot sauce
  • to taste jalapeno slices optional

Method
 

Preparation
  1. Mix the cabbage or slaw mix, diced mango, chopped cilantro, lime juice, salt, and pepper in a bowl to create the slaw.
  2. In a hot skillet, season the shrimp with salt and pepper, and cook for 1 to 2 minutes on each side until they turn pink and opaque.
  3. Warm the tortillas in a separate skillet for about 20 seconds on each side.
Assembly
  1. Build the tacos by placing the cooked shrimp on the tortillas, topping them generously with slaw mixture and any optional toppings you desire.

Notes

To prevent slaw from getting watery, salt lightly and keep dressing separate until just before serving. For meal prep, keep components separate until ready to assemble.
