Preparation
- Preheat your oven to 400°F (about 200°C) and line a baking tray with parchment paper.
- Cut the puff pastry sheet into 6 to 8 rectangles or squares.
- Whisk the egg with a teaspoon of water and brush a thin layer on top of the pastry pieces.
- Bake the pastry for 14 to 18 minutes until puffed and golden brown. If they look pale, give them an additional 2 minutes.
- Let the pastries cool completely for at least 20 minutes.
Cream Preparation
- Whip the cold cream with powdered sugar, vanilla, and a pinch of salt until it holds soft peaks.
- If the cream looks grainy, you whipped it too much. Stop a bit earlier next time.
Assembly
- Slice the cooled mango thinly or cube it, and toss it with lemon or lime juice.
- Split each pastry piece in half like a sandwich. Add layer of whipped cream, mango, then replace with the top pastry piece. Optional: add extra mango on top for garnish.
Notes
Keep the puff pastry cold and do not overload it before baking. Use parchment paper to prevent sticking, and let it cool fully to avoid melting issues.
