A delicious Filipino style spring roll filled with a savory mixture, wrapped in thin lumpia wrappers and fried to golden perfection. It’s a perfect snack or appetizer for any occasion.

Ingredients
  

For the filling
  • 1 lb Ground pork You can mix with shrimp for extra flavor.
  • 2 cloves Garlic, minced For a savory base.
  • 1 medium Onion, finely chopped Adds flavor.
  • 1 cup Carrots, finely chopped For sweetness and color.
  • 2 cups Cabbage, shredded Helps in quick cooking.
  • 2 tbsp Soy sauce For salt and depth of flavor.
  • 1 large Egg Helps bind the filling.
  • 1 tsp Black pepper Adjust to taste.
  • 1 tsp Salt Adjust to taste.
For the lumpia
  • 10 pieces Lumpia wrappers Keep covered with a damp towel while assembling.
  • 2 cups Oil for frying Use neutral oil such as canola or vegetable.

Method
 

Preparation
  1. In a bowl, combine ground pork, minced garlic, finely chopped onion, carrots, cabbage, soy sauce, egg, black pepper, and a pinch of salt.
  2. Mix everything until evenly combined.
  3. Taste a small cooked portion of the mixture to check seasoning.
Rolling
  1. Set up a rolling station with wrappers, filling, a small bowl of water, and a plate for finished rolls.
  2. Place a lumpia wrapper like a diamond shape in front of you. Add 1 to 1.5 tablespoons of filling near the bottom corner, shaping it into a little log.
  3. Roll snugly, fold in the sides like an envelope, then continue rolling. Dab water on the top corner to seal.
  4. Keep the finished rolls covered with a clean towel if not frying immediately.
Cooking
  1. Heat oil in a deep pan over medium to medium-high heat.
  2. Fry lumpia in batches, turning occasionally until golden brown and crisp, about 4 to 7 minutes.
  3. Drain on a rack or paper towels.

Notes

Lumpia is best enjoyed fresh but can be frozen for later use. They can be made ahead and fried from frozen. For a baked version, lightly brush with oil and bake until golden, flipping once.
