Preparation
- Preheat the oven to 400°F (200°C).
- Scrub the russet potatoes, dry them, poke holes with a fork, rub lightly with oil and a pinch of salt, then bake for 50 to 60 minutes until tender.
- Allow the potatoes to cool until manageable, then cut each potato in half lengthwise.
- Scoop out most of the insides, leaving about a quarter inch of potato inside.
Cooking
- Brush the inside and outside of the potato skins with oil or melted butter and place cut side down on a baking sheet. Bake for 10 minutes.
- Flip the skins and bake another 8 to 10 minutes until crispy.
- Flip cut side up, add cheese and bacon, and bake for 5 to 7 minutes until cheese is bubbly.
Serving
- Top with green onions and a generous spoon of sour cream right before serving.
Notes
Use russet potatoes for best results and do not scoop out too much potato to prevent collapse. The recipe can be easily customized by swapping out ingredients as per availability.
