Ingredients
  

For the roasted potatoes
  • 4 cups potatoes, chopped (russet or Yukon gold) Cut into small bite-sized pieces for faster cooking.
  • 2 tablespoons olive oil For tossing with the potatoes.
  • 1 teaspoon salt To taste.
  • 1 teaspoon pepper To taste.
  • 1 teaspoon garlic powder Can adjust based on preference.
  • 1/2 teaspoon paprika For added flavor.
For the beef
  • 1 pound ground beef or turkey Can use leftovers from previous meals.
  • 1 teaspoon salt To taste.
  • 1 teaspoon pepper To taste.
For toppings
  • 1 cup shredded cheese Cheddar, pepper jack, or your choice.
  • 1 cup shredded lettuce For crunch.
  • 1 cup diced tomatoes Or pico de gallo.
  • 1/2 cup pickles Diced.
  • 1/2 cup thinly sliced onions Optional.
  • 1/2 cup sauce Mix Greek yogurt with ketchup, mustard, and relish.

Method
 

Prepare Potatoes
  1. Preheat the oven to 425°F (220°C).
  2. Chop the potatoes into small bite-sized pieces and toss with olive oil, salt, pepper, garlic powder, and paprika.
  3. Spread the potatoes out on a baking sheet and bake for 25 to 35 minutes, flipping halfway, until crispy.
Cook Beef
  1. While the potatoes are baking, cook the ground beef in a pan over medium heat.
  2. Season with salt and pepper, drain any excess grease if necessary.
Assemble the Bowls
  1. Start with a base of crispy potatoes in each bowl.
  2. Add the cooked beef on top.
  3. Layer with shredded cheese, followed by lettuce, tomatoes, pickles, onions, and finally drizzle with sauce.

Notes

For best results, keep wet toppings separate until ready to eat. Use leftover cooked beef for quick meals. Experiment with different toppings based on your preference.
