  • Zucchini (for roasting) Chopped into similar-sized pieces.
  • Bell peppers (for roasting) Chopped into similar-sized pieces.
  • Red onion (for roasting) Chopped into similar-sized pieces.
  • Cherry tomatoes (for roasting) Keep them whole for best results.
  • Cauliflower (for roasting) Chopped into florets.
  • Carrots (for roasting) Chopped into similar-sized pieces.
  • Mushrooms (for roasting) Cleaned and halved or quartered.
For Roasting
  • 3 tablespoons Olive oil For tossing vegetables.
  • 1 teaspoon Salt To taste.
  • 1 teaspoon Pepper To taste.
  • 1 teaspoon Cumin or paprika For seasoning the vegetables.
Fresh Add-Ons
  • Cucumber slices For a refreshing touch.
  • Radishes For crunch.
  • Chopped parsley or dill For garnish.
  • 1 each Lemon wedges For squeezing over the board.

  • 1/2 cup Toasted pine nuts For additional crunch.

Method
 

Roasting the Vegetables
  1. Preheat the oven to 425°F (220°C).
  2. Chop the vegetables into similar-sized pieces for even roasting.
  3. In a large bowl, toss the chopped vegetables with olive oil, salt, pepper, and cumin or paprika.
  4. Spread the vegetables evenly on a baking sheet and roast for 20-30 minutes, until edges are browned.
  5. Keep cherry tomatoes whole for best results until after roasting.
Assembling the Hummus Board
  1. Spread a thick layer of hummus over a large plate.
  2. Use the back of a spoon to create swirls in the hummus.
  3. Pile the roasted vegetables in the center of the hummus.
  4. Top with olives, pickles, herbs, and any crunchy toppings.
  5. Arrange pita, crackers, or fresh veggies around the platter for scooping.
