Ingredients

Cake Ingredients
  • 2 cups all purpose flour for a sturdy but tender crumb
  • 2 teaspoons baking powder for lift
  • 1 teaspoon salt to balance the sweetness
  • 2 tablespoons poppy seeds for texture
  • 1 cup unsalted butter at room temperature
  • 1.5 cups granulated sugar
  • 4 eggs at room temperature
  • 1 cup sour cream or plain Greek yogurt for moisture
  • 2 tablespoons lemon zest do not skip this
  • 1/2 cup fresh lemon juice
  • 2 teaspoons vanilla extract
  • 1 cup powdered sugar for a quick glaze

Method

Preparation
  1. Preheat your oven to 350°F (175°C). Grease your bundt pan really well, getting into every little curve.
  2. In a bowl, whisk together the flour, baking powder, salt, and poppy seeds. Set aside.
  3. In a larger bowl, beat the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, mixing after each addition.
  5. Mix in the sour cream, lemon zest, lemon juice, and vanilla extract.
  6. Add the dry ingredients to the wet ingredients and mix just until there are no flour streaks.
  7. Spoon the batter into the prepared bundt pan and smooth the top.
Baking
  1. Bake in the preheated oven for 45 to 55 minutes, checking for doneness with a skewer.
  2. Let the cake cool in the pan for about 10 to 15 minutes before turning it out onto a rack to cool completely.
  3. While cooling, make a glaze by mixing powdered sugar and lemon juice until thick but pourable.
  4. Once the cake is cool, drizzle the glaze on top and allow it to set.

Notes

To avoid bundt cake sticking, ensure to grease and flour the pan thoroughly. Use room temperature ingredients for a smoother batter. Check for doneness using a skewer, and allow the cake to cool before glazing.
