Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or lightly grease it.
- In a large bowl, mix together the lemon cake mix, eggs, and oil until well combined. The dough will be thick and slightly sticky.
Shaping and Baking
- Scoop dough into small balls, about 1 tablespoon each. If desired, roll the dough balls in powdered sugar for a crinkle look.
- Bake for 9 to 11 minutes. The edges should be set while the centers remain soft.
- Let the cookies cool on the pan for 3 to 5 minutes before transferring them to a wire rack.
Notes
Cookies can be dressed up with lemon glaze, white chocolate drizzle, sprinkles, or extra zest. Keep cookies in an airtight container for up to 3-4 days.
