Preparation
- Preheat your oven to 350 F. Grease and flour your Bundt pan.
- Whisk together the dry ingredients: flour, baking powder, and salt.
- In a separate bowl, cream the butter and sugar until light and fluffy.
- Add eggs one at a time, mixing after each addition. Then add vanilla, lemon zest, and lemon juice.
- Mix in the sour cream or Greek yogurt.
- Add the dry ingredients and mix just until no dry flour remains.
- Toss blueberries with a little flour, then gently fold them into the batter.
- Spoon the batter into the pan and smooth the top.
Baking
- Bake for about 45 to 55 minutes, until a toothpick comes out mostly clean.
- Cool in the pan for 10 to 15 minutes, then invert onto a cooling rack.
Glazing
- For a simple glaze, mix powdered sugar with lemon juice until thick but pourable.
- Drizzle over the cooled cake and let it set for about 15 minutes before slicing.

This cake fits into any occasion, including brunch or casual gatherings. Store covered at room temperature for up to 2 days, then refrigerate for another 2-3 days. It also freezes well—wrap slices in plastic and place in a freezer bag.
