  • 2 tablespoons lemon zest Add more for extra flavor.
For finishing
  • 1 cup powdered sugar For dusting before serving.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a regular-sized muffin tin generously.
  3. Press the cookie dough into each muffin cup to form a bowl shape.
Baking
  1. Bake the cookie cups for 10 minutes until slightly golden.
  2. In a bowl, whisk together eggs, granulated sugar, lemon juice, and zest.
  3. Pour the lemon filling into each pre-baked cookie bowl.
  4. Return to the oven and bake for an additional 10 minutes until just set.
