Preparation
- Preheat your oven to 400°F (200°C) and grab a 9-inch pie dish or similar baking dish.
- In a large skillet, melt butter over medium heat. Add chopped onion, carrots, and celery. Cook until softened, about 6 to 8 minutes.
- Stir in garlic and cook for 30 seconds.
- Sprinkle flour over the mixture and stir for about 1 minute until it becomes a little pasty.
- Slowly pour in broth while stirring so it doesn't get lumpy. Then add milk and keep stirring until it thickens, about 3 to 5 minutes.
- Season with salt, pepper, and thyme, then stir in the chopped turkey and peas.
- Pour the filling into your baking dish.
- Top with your crust. If using pie crust, lay it over the top, tuck the edges, and cut a few small slits for steam to escape.
- Bake for 30 to 40 minutes, or until the crust is golden and you see bubbly filling around the edges.
- Let it rest for 10 minutes before serving.
Notes
To keep the filling thick, let it simmer if too thin. Use frozen mixed veggies for a shortcut. Leftovers can be refrigerated for up to 4 days.
