Leftover Turkey Casserole with Stuffing

  • 3-4 cups Cooked turkey, chopped or shredded
  • 3-5 cups Leftover stuffing
  • 1-2 cups Frozen or cooked veggies (peas and carrots or mixed veggies)
  • 1 can Cream of mushroom or cream of chicken soup (or 1 and 1/2 cups homemade gravy)
  • 1/2 cup Milk or broth Add more for extra creaminess
  • 1/2 cup Sour cream or plain Greek yogurt Optional but recommended
  • 1-2 tablespoons Butter for dotting the top
  • Salt and pepper

Method
 

Preparation
  1. Heat your oven to 375°F (190°C). Lightly grease a 9x13 baking dish.
  2. In a big bowl, mix turkey, veggies, soup (or gravy), milk or broth, and sour cream if using. Season with salt and pepper.
  3. Spread the creamy turkey mixture into the baking dish.
  4. Add stuffing on top. If stuffing is dry, sprinkle a few tablespoons of broth over it. Dot the top with a little butter.
Baking
  1. Bake for 25 to 35 minutes, until hot all the way through and the top is browned. If the top starts to get too dark, loosely cover with foil for the last 10 minutes.
  2. Let it sit for 5 to 10 minutes before scooping to allow it to thicken.

Notes

Feel free to get creative with variations such as adding cheese, cranberry sauce, or different vegetables. Make it lighter by substituting Greek yogurt for sour cream.
