Ingredients
  

Main Ingredients
  • 4 eggs Scrambled separately for best texture.
  • 3 cups cold leftover rice Break up with a fork before cooking.
  • 2 tablespoons neutral oil Such as vegetable or canola.
  • 1 cup mixed vegetables Peas, carrots, corn, bell pepper, or broccoli.
  • 2 tablespoons soy sauce Adjust to taste.
  • 1 teaspoon sesame oil Optional but adds a nice aroma.
Optional Ingredients
  • 1 medium onion Some people prefer garlic as an addition.
  • 2 cloves garlic Optional for additional flavor.
  • 1 cup protein Chicken, shrimp, tofu, or leftover steak.

Method
 

Preparation
  1. Heat a large skillet on medium high and add a little oil.
  2. Scramble the eggs until just cooked, then transfer them to a plate.
  3. Add more oil and cook the onion and garlic for about 30 seconds to 1 minute.
  4. Add the mixed vegetables and cook until bright and warmed through.
  5. Add the cold rice, spreading it out and pressing it lightly. Let it sit for 20 to 30 seconds before stirring.
  6. Drizzle in the soy sauce, stir well, and adjust according to taste.
  7. Add the cooked egg back along with any optional protein.
  8. Finish with a splash of sesame oil if desired.

Notes

Keep the pan hot and avoid overcrowding for best results. For added flavor, consider adding a small pinch of sugar or a splash of oyster sauce.
