Ingredients
  

Crust and Topping
  • 1 cup flour All-purpose flour
  • 1 cup rolled oats Old-fashioned rolled oats
  • 1/2 cup brown sugar Packed brown sugar
  • 1/2 cup melted butter Melted unsalted butter
Filling
  • 1 package cream cheese 8-oz block, room temperature
  • 1 can sweetened condensed milk
  • 2 pieces lemons Juice and zest of 2 lemons
  • 1/2 tsp vanilla Vanilla extract
  • 1 piece egg Large egg

Method
 

Preparation
  1. Mix flour, rolled oats, brown sugar, and melted butter in a large bowl.
  2. Press half of the mixture into a lined 8x8 pan.
  3. In another bowl, whip together cream cheese, sweetened condensed milk, lemon juice and zest, vanilla, and egg.
  4. Spread the lemony mixture over the crust.
  5. Sprinkle the remaining oat mixture on top.
Baking
  1. Bake in a preheated oven at 350°F for 25-30 minutes until the edges are golden and the center is just set.
  2. Cool for at least two hours before slicing.

Notes

Chill for clean-cut squares. Dust with powdered sugar for an elegant touch. Leftovers can be stored in the fridge for up to five days. Avoid freezing to keep the filling texture intact.
