Ingredients
  

Lavender Honey Syrup
  • 1 cup water For syrup preparation
  • 1 cup honey Use a sweetener you enjoy
  • 1-2 teaspoons culinary lavender Use food-grade lavender only
Main Ingredients
  • 1 cup fresh lemon juice Juice enough lemons for this amount
  • 3-4 cups cold water Adjust based on taste, can use sparkling water
  • ice Ice To serve chilled
  • as needed lemon slices and lavender sprigs Optional for garnish
  • a pinch salt Optional to enhance flavor

Method
 

Preparation of Lavender Honey Syrup
  1. In a small saucepan, add 1 cup water and 1 cup honey. Warm it over medium heat and stir until the honey dissolves.
  2. Turn off the heat, then stir in 1 to 2 teaspoons culinary lavender. Cover and let it steep for 5 to 10 minutes.
Straining the Syrup
  1. Pour the syrup through a fine strainer into a bowl or measuring cup. Press lightly if needed but do not mash the lavender.
Mixing the Drink
  1. Juice enough lemons to get about 1 cup of fresh lemon juice.
  2. In a pitcher, combine the lavender honey syrup and lemon juice. Add 3 to 4 cups cold water, taste, and adjust to your liking.
Serving
  1. Add lots of ice, lemon slices, and if desired, a tiny pinch of salt before serving.

Notes

Store any leftover syrup in the fridge. Dilute with more water or lemon juice if the lavender flavor is too strong. Feel free to adjust the sweetness and tartness based on taste.
