Ingredients
  

Main Ingredients
  • 2 cups Cooked cold rice Use day-old rice for the best texture
  • 1 cup Chopped kimchi The star ingredient; can use kimchi juice as well
  • 1-3 tablespoons Kimchi juice From the jar of kimchi
  • 1-2 cloves Garlic, minced For added flavor
  • 1 tablespoon Oil Any neutral oil for cooking
  • 1 splash Soy sauce Optional, for additional depth of flavor
  • 1 teaspoon Gochujang (Korean chili paste) Optional, for heat
  • a few drops Sesame oil To finish the dish
  • 2 stalks Green onions, chopped For garnish and freshness
Optional Toppings
  • 2 eggs Fried eggs Best topping, adds creaminess
  • to taste Sesame seeds For extra texture and flavor
  • to taste Roasted seaweed strips For a different flavor
  • 1 slice Cheese Melted cheese can add richness

Method
 

Cooking
  1. Heat a pan and add oil.
  2. Add minced garlic and sauté until fragrant.
  3. Add chopped kimchi and cook for 1-2 minutes until softened.
  4. If using, add your chosen protein now.
  5. Add the cold rice, stirring and pressing it into the pan to achieve some browning.
  6. Gradually add kimchi juice while mixing. Adjust the flavor with soy sauce or gochujang as needed.
  7. Once everything is evenly mixed and flavored to your liking, turn off the heat.
  8. Finish with a few drops of sesame oil and stir in chopped green onions.
  9. Serve hot, optionally topped with a fried egg and other toppings.

Notes

The key to great kimchi fried rice is using day-old rice and properly seasoning it. Don’t skip the sesame oil at the end for extra flavor.
