- Heat a pan and add oil.
- Add minced garlic and sauté until fragrant.
- Add chopped kimchi and cook for 1-2 minutes until softened.
- If using, add your chosen protein now.
- Add the cold rice, stirring and pressing it into the pan to achieve some browning.
- Gradually add kimchi juice while mixing. Adjust the flavor with soy sauce or gochujang as needed.
- Once everything is evenly mixed and flavored to your liking, turn off the heat.
- Finish with a few drops of sesame oil and stir in chopped green onions.
- Serve hot, optionally topped with a fried egg and other toppings.
Notes
The key to great kimchi fried rice is using day-old rice and properly seasoning it. Don’t skip the sesame oil at the end for extra flavor.
