  • 2 medium carrots Sliced.
  • 3 cups cabbage Chopped.
  • 2 cloves garlic Minced.
  • 2 tablespoons olive oil For browning kielbasa and sautéing vegetables.
  • 1 teaspoon smoked paprika Optional for a smoky flavor.
  • 1 tablespoon apple cider vinegar For brightness.
Optional Add-ins
  • 1 pinch red pepper flakes For heat.
  • 1 can diced tomatoes For a rustic twist.
  • 1/4 cup sour cream For a creamy finish.

Method
 

Preparation
  1. Brown the kielbasa in olive oil in a large pot over medium heat until crispy.
  2. Add the onions and carrots, sauté until soft, then add garlic and cook for an additional 30 seconds.
  3. Add the potatoes and chicken broth, and bring to a boil.
  4. Reduce heat, cover, and simmer until potatoes are tender, about 15-20 minutes.
  5. Add the chopped cabbage and continue to cook until tender, about 5 minutes.
Finishing Touches
  1. Stir in smoked paprika and apple cider vinegar.
  2. Season to taste with salt and pepper. Let sit for 10 minutes before serving.
  3. Optional: Stir in sour cream for a creamy texture before serving.

Notes

For added flavor, consider adding a pinch of caraway seeds or a squeeze of lemon juice before serving. Ideal for freezing in portions for later enjoyment.
