Cake Ingredients
  • 1 cup Butter (room temperature) Ensure it's soft for easier mixing.
  • 2 cups Sugar
  • 4 large Eggs At room temperature.
  • 3 cups All-purpose flour Measured correctly for best results.
  • 1 tablespoon Baking powder For leavening.
  • 1 teaspoon Salt
  • 1/2 cup Key lime juice Fresh if possible.
  • 2 tablespoons Key lime zest For flavor.
  • 1/2 cup Milk or buttermilk
  • 1 teaspoon Vanilla extract
Optional Glaze
  • 1 cup Powdered sugar For glaze.
  • 2-3 tablespoons Key lime juice

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C) and grease a bundt pan or loaf pan thoroughly.
Mixing
  1. In a large bowl, cream together the butter and sugar until fluffy and light in color.
  2. Add the eggs one at a time, mixing well after each addition.
  3. Mix in the key lime zest, key lime juice, and vanilla until well combined.
Combining Ingredients
  1. In a separate bowl, whisk together the flour, baking powder, and salt.
  2. Slowly add the dry mixture to the wet mixture, alternating with the milk or buttermilk. Mix until just combined.
Baking
  1. Pour the batter into the prepared pan and smooth the top.
  2. Bake for 55 to 70 minutes, until a toothpick inserted into the cake comes out with a few moist crumbs.
Cooling and Glazing
  1. Let the cake cool in the pan for about 15 minutes before turning it out onto a wire rack.
  2. For optional glazing, mix powdered sugar with key lime juice and drizzle over the slightly warm cake.

Notes

This cake can be served plain or with a glaze, whipped cream, berries or toasted coconut. It is easy to make ahead and tastes even better the next day.
