Japanese Strawberry Cake

Ingredients
  

For the Sponge Cake
  • 4 large Eggs Room temperature helps them whip up bigger.
  • 120 grams Granulated sugar
  • 120 grams Cake flour Or all-purpose flour sifted well.
  • 60 ml Milk Or a mix of milk and a little melted butter for a richer sponge.
  • 1 tsp Vanilla extract
For the Whipped Cream and Decoration
  • 240 ml Heavy cream Cold, straight from the fridge.
  • 30 grams Powdered sugar Just a little for the cream.
  • 500 grams Fresh strawberries Sweet, bright, not mushy. Can sprinkle sugar on tart berries.

Method
 

Preparation
  1. Preheat your oven, line your pan with parchment, and measure all ingredients.
  2. Warm the eggs and sugar slightly by placing the mixing bowl over warm water for a minute while whisking.
Making the Sponge
  1. Whip the egg and sugar mixture until thick and pale, it should fall in ribbons.
  2. Sift in the flour in batches, then fold gently with a spatula.
  3. Add milk (and melted butter if using) carefully; mix a scoop of batter into the warm liquid first, then pour it back.
  4. Bake and do not slam the oven door. The cake should spring back lightly when touched.
  5. Cool upside down if possible to help reduce shrinking.
Decorating
  1. Chill the mixing bowl and beaters for 10 minutes. Keep the cream cold.
  2. Sweeten the whipped cream lightly with powdered sugar.
  3. Slice strawberries evenly to ensure flat layers.
  4. Spread a thin layer of cream around the sides for a 'naked' look.
  5. Optional: Add strawberry jam between layers or a few blueberries for color.

Notes

If you make this cake the day before, it can taste better after a few hours in the fridge. Make sure to dry strawberries well to prevent leaking.
