For the main dish
  • 1 lb Italian sausage (sweet or hot, or a mix) Feel free to choose based on your preference for spice.
  • 1 red bell pepper Red bell pepper Adds sweetness.
  • 1 yellow or orange bell pepper Yellow or orange bell pepper Provides a mellow flavor.
  • 1 green bell pepper Green bell pepper Gives a bit of bitterness and bite.
  • 1 medium Onion Sliced.
  • 1 tbsp Olive oil For cooking.
  • to taste Salt Adjust according to preference.
  • to taste Black pepper Adjust according to preference.
  • optional Crushed tomatoes or marinara If you prefer a saucy dish.

Method
 

Cooking the Sausage
  1. In a large skillet over medium heat, brown the sausage on all sides. Remove from the skillet and set aside.
Cooking the Vegetables
  1. In the same skillet, add olive oil and sliced onions. Cook until the onions are soft.
  2. Add the sliced bell peppers and cook until they are tender and glossy.
Combining Everything
  1. Return the browned sausage to the skillet with the peppers and onions. Cook until heated through.
  2. If desired, add crushed tomatoes or marinara for a saucier version.
Serving
  1. Serve hot, either by itself, with crusty bread, or in a sandwich.

Notes

You can store leftovers in an airtight container in the fridge for 3-4 days or freeze for up to 2 months. For reheating, use a skillet for best results.
