Method
Cooking the Sausage
- Heat a large cast iron pan on medium heat.
- Add a splash of olive oil to the pan.
- Place whole sausages in the pan and brown them on all sides.
- Once browned, remove sausages from the pan and set aside.
Cooking the Vegetables
- In the same pan, add sliced peppers and onions without wiping it.
- Cook until softened, about 5-7 minutes.
- Sprinkle with salt, pepper, and Italian herbs.
- Return the sausages to the pan and cover, cooking on low for 10 minutes.
- Optionally, add a splash of white wine or chicken broth before simmering.
Notes
For serving, try in a toasted hoagie, with crusty bread, steamed rice, or roasted potatoes. Leftovers can be stored in the fridge for up to 3 days, or frozen for up to 3 months.
