Ingredients
  

Main Ingredients
  • 1 cup Ricotta cheese (whole milk preferred) Drain if watery before using.
  • 1/2 cup Butter, softened Use softened, not melted.
  • 1 cup Granulated sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 2 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 1/4 teaspoon Salt
Icing Ingredients
  • 2 cups Powdered sugar
  • 2 tablespoons Milk or lemon juice
  • 1 teaspoon Vanilla or almond extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Cream together the butter and sugar until fluffy.
  3. Add eggs and vanilla then mix in the ricotta cheese.
  4. Stir in flour, baking powder, and salt until just combined.
Baking
  1. Scoop dough onto a lined baking tray.
  2. Bake for about 12-14 minutes, until set but not browned.
  3. Cool completely before icing.
Icing
  1. Mix the powdered sugar with milk or lemon juice and flavoring until smooth.
  2. Drizzle or spread the icing over the cooled cookies.

Notes

For the softest cookies, do not overmix the dough once the flour is added. You can also experiment with flavors by adding almond extract, lemon zest, or mini chocolate chips.
