Ingredients
  

For the Cocktail
  • 1 oz Elderflower liqueur (like St Germain) or elderflower syrup Use syrup for a lower alcohol option.
  • 3 oz Prosecco Chilled.
  • 1 oz Soda water Chilled.
  • 10 leaves Fresh mint leaves More than you think; gently clapped to awaken.
  • 1 slice Lime Wedges or slices.
  • 1 cup Ice Lots of it.

Method
 

Building the Cocktail
  1. Chill all your ingredients. Cold Prosecco and soda water will enhance the taste.
  2. Fill a large wine glass with ice.
  3. Pour in the elderflower liqueur or syrup.
  4. Add the clapped mint leaves and squeeze in a lime wedge, and then drop it in too.
  5. Top with Prosecco, followed by a smaller splash of soda water.
  6. Stir gently to combine without flattening the drink.

Notes

Make sure to taste after your first pour and adjust sweetness with soda water or elderflower liqueur as needed.
