  • to taste green onions optional topping
  • to taste cilantro optional topping
  • to taste pickled onions optional topping
  • to taste avocado optional topping

Method

Preparation
  1. Preheat oven to 425°F (220°C).
  2. Dice the sweet potato into small cubes. Toss with olive oil, salt, pepper, and any spices you like.
  3. Roast the sweet potato in the oven for 20 to 30 minutes until tender and browned in spots. If using an air fryer, the cooking time will be less.
Cook the Beef
  1. While the sweet potatoes are roasting, brown the ground beef in a skillet over medium heat.
  2. Season beef with salt, pepper, garlic powder, and smoked paprika. Drain any excess grease, ensuring the beef remains juicy.
Assemble the Bowl
  1. Add roasted sweet potatoes to a bowl, followed by the hot beef.
  2. Scoop cottage cheese on top and drizzle with hot honey. The heat from the beef will warm the cottage cheese slightly, creating a creamy texture.
Final Touches
  1. Taste the bowl and adjust flavors to preference, adding more salt, hot honey, or additional toppings as desired.

Notes

For meal prep, roast a tray of sweet potatoes and cook a batch of beef to keep them separate from the cottage cheese and hot honey until ready to eat. The dish reheats well.
