Preparation
- Preheat your oven to 350°F.
- Set your pie crust in a 9-inch pie plate if it isn’t already. If using a frozen crust, keep it frozen until you pour in the filling.
Making the Filling
- Melt butter with the chocolate until smooth using a double boiler or the microwave in short bursts, stirring in between.
- Stir in cocoa powder if using. Let the mixture cool for a minute.
- In a bowl, whisk together sugar, brown sugar, and eggs until the mixture looks glossy and thick.
- Add vanilla and salt to the egg mixture.
- Slowly stream the warm chocolate mixture into the egg mixture, stirring constantly until it forms a shiny, uniform batter.
Baking
- Pour the batter into the pie crust and smooth the top with a spatula.
- Place the pie on a baking sheet for easy handling and bake for 30 to 38 minutes, depending on desired gooeyness.
- Let the pie cool on a rack for at least 20 to 30 minutes before slicing.
