Ingredients
  

Main Ingredients
  • 1 cup Granulated sugar Use white granulated sugar for best results.
  • 1/3 cup Golden syrup Can be substituted with corn syrup.
  • 1/3 cup Water To dissolve the sugar.
  • 1 teaspoon Baking soda Sift or break up lumps before use.

Method
 

Preparation
  1. Line a baking pan with parchment paper to prevent sticking.
  2. In a medium saucepan, combine sugar, golden syrup, and water. Stir just to mix.
Cooking
  1. Turn the heat to medium and allow the mixture to boil without stirring until it turns a deeper golden color.
  2. Remove the pot from heat and quickly add baking soda. Stir for a few seconds until it foams up.
  3. Pour the mixture immediately into the lined baking pan and let it cool completely for at least 45 minutes.
  4. Once cooled, crack the honeycomb into pieces.

Notes

Store honeycomb in an airtight container at room temperature. Avoid humidity as it can make the candy sticky. Best eaten within a week.
