Ingredients
  

For the glaze
  • 1/4 cup honey For a glossy, sticky finish; maple syrup can be used as an alternative.
  • 1/4 cup soy sauce Regular or low sodium soy sauce works.
  • 2 cloves garlic, minced Fresh is best; garlic powder can be used in a pinch.
  • 1 teaspoon ginger, grated Fresh grated is excellent; ground ginger is acceptable.
  • 1 tablespoon rice vinegar or lemon juice Cuts sweetness in the glaze.
  • 1 teaspoon sesame oil Optional for added flavor.
For the salmon and veggies
  • 4 fillets salmon Center cut pieces preferably; skin on helps retain moisture.
  • 2 cups broccoli florets Can substitute with green beans or asparagus.
  • 2 cups green beans Monitor cook time to avoid overcooking.
  • 1 cup bell pepper, sliced Optional; also great with snap peas.
  • 2 tablespoons olive oil For tossing the veggies.
  • to taste salt and pepper For seasoning veggies.

Method
 

Preparation
  1. Preheat your oven to 400°F and line a sheet pan with foil or parchment for easy cleanup.
  2. Prepare the veggies by tossing them with olive oil, salt, and pepper, then spread them out on the sheet pan.
Cooking
  1. Roast the veggies for about 10 minutes to start cooking.
  2. While the veggies are roasting, stir together the glaze ingredients: honey, soy sauce, garlic, ginger, and vinegar or lemon juice.
  3. After 10 minutes, push the veggies to the sides and place the salmon fillets in the center of the pan. Brush the salmon with the glaze and spoon some over the veggies.
  4. Roast for an additional 8 to 12 minutes, depending on the thickness of the salmon. Check for doneness at 8 minutes.

Notes

Ensure not to crowd the pan for even roasting. Pat the salmon dry before glazing for better adherence. It is best when the salmon is not overcooked; aim for an internal temperature of 125°F to 130°F.
